Healthy muffins for breakfast or snack time. Thank you Athena!
Ingredients & Instructions:
Dry
- 2 cups Super Find almond meal
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1 TBS@midorispringOrganic Matcha
- 1/4 cup chia seeds
- 3/4 cup blueberries (fresh or frozen)
Wet
- 2eggs
- 2 TBS honey(up to 1/4 cup)*
- 1/4 cup coconut oil
- juice of 1 lemon
- 1 tspvanilla powder
What To Do:
- Heat your oven to 350 degrees.
- Mix all of your dry ingredient in a large bowl.
- In a smaller bowl, mix all wet ingredients together before slowing mixing the wet mix into the dry ingredients.
- Then Fold in Blueberries.
- Line a cupcake pan with silicone muffin liners and divide the batter evenly and top withhemp seeds.
- Place in your oven and bake for 25 minutes.
- *I don’t like SWEET things which is why I only used 2 TBS honey. You can use up to 1/4 cup.

Finally, an affordable matcha option that I can drink straight! 😎
While culinary grade matcha options can often taste just fine as a cold brew, which neutralizes any unpleasant "seaweed" notes, it is awesome to discover an affordable ceremonial grade option that tastes amazing hot, called Emerald, by Midori Spring!
My biggest issue in the past, was that drinking matcha cold or adding creamers never seemed to bring the same amazing feelings or health benefits.

Let’s call it “afternoon matcha”
I have been a customer of Midori springs for over 7 years. The new packaging & “Hoji” definitely caught my eye. Convenient enough, I had already giving up coffee before, so this is a nice option to have if I want to make a “mocha”. It isn’t an exact replica of espresso by any means, it taste more like a medium-light roast drip coffee - but it’s definitely fun to have on hand! Plus I can now have “afternoon matcha” since it has less caffeine. :) Thanks Midori!

1. The packaging is adorable, 2. I like how rich in flavor it is, my family really enjoys this product and the wisk is such an easy way to blend the matcha so over all 5 stars.

Very strong
This has a very strong coffee like flavor to it. It was too nutty and smokey for my preference. I prefer the organic ceremonial blend to this.

I meant to purchase the matcha, but accidentally got the Hojicha instead. I enjoyed the nutty, earthy flavor. I’m going to try their ceremonial grade matcha next. Can’t wait!
